Our Story

Ours is the story of one classic dilemma, two enduring passions, and one universal dream. 

Did we question our sanity during this pilgrimage? Sure. Some. We even questioned our specific passions, looking lovingly at seaweed or oysters or pork . . .  but it all just reaffirmed our devotion to chicken. And eggs. And allowed us to move on toward our dream. 

The twin passions are chicken. And eggs. And they sent us on a 7 year journey to find the most interesting and delicious ways to prepare them. From street stalls to holes-in-the-walls with Michelin stars, we’ve stood in line, and braved the throngs, and sat at rickety formica or white tablecloths to sample and search and take notes and find the answers.

The universal dream. A dream of home. In our case, a place where neighbors could meet and eat and trade the fruits of their labors for the fruits of ours. A place that would honor the genius of the people we met on our grand culinary journey and would

synthesize their amazing recipes into something our local patrons would find remarkable and comfortable at the same time. We named this dream The Nest.

What about the “classic dilemma” you may be asking... Well, even after all these years, it remains just that. And here it is: which came first, the chicken or the egg? Discuss amongst yourselves. And if you have any ideas, let us know.
